Seared Scallops with Citrus Herb Gremolata

paired with Bartier Bros. Chardonnay 2023

The vibrant citrus and fresh herb notes in the gremolata highlight the Bartier Bros. Chardonnay’s crisp acidity and minerality, while the scallops’ delicate sweetness balances the wine’s subtle complexity.

Ingredients:

12 large sea scallops
Salt and freshly ground black pepper (to taste)
2 tablespoons olive oil
1 garlic clove, minced
Zest of 1 lemon
Zest of 1 orange
2 tablespoons fresh parsley, finely chopped
1 teaspoon fresh thyme leaves
1 tablespoon fresh lemon juice

Instructions:

1. Prepare the Scallops:
Pat the scallops dry with paper towels to ensure a good sear.
Season both sides with salt and pepper.

2. Make the Gremolata:
In a small bowl, combine the garlic, lemon zest, orange zest, parsley, thyme, and lemon juice.
Set aside.

3. Sear the Scallops:
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add scallops in a single layer, ensuring they are not crowded.
Sear for 2-3 minutes per side until golden brown and opaque in the center.
Remove from the skillet and set aside.

4. Serve:
Plate the scallops and top each with a generous sprinkle of the citrus herb gremolata.
Serve immediately with a side of steamed green beans, roasted asparagus, or a light green salad and a glass of Bartier Bros. Chardonnay 2023
