Grilled Ratatouille with Camembert Cream

Ingredients:

For the Ratatouille:

1 medium eggplant, sliced into ½-inch rounds
1 medium zucchini, sliced into ½-inch rounds
1 red bell pepper, cut into large strips
1 yellow bell pepper, cut into large strips
1 red onion, cut into thick wedges
2 medium tomatoes, halved
3 tbsp olive oil
1 tsp dried thyme
1 tsp smoked paprika
Salt and pepper, to taste

 

For the Camembert Cream:

150g (5 oz) Camembert cheese, rind removed and cut into pieces
½ cup heavy cream
1 tbsp unsalted butter
1 clove garlic, finely minced
Salt and white pepper, to taste

 

For Garnish:

Fresh basil leaves
A drizzle of balsamic glaze (optional)

 

Instructions

1. Prepare the Vegetables:
Preheat your grill or grill pan to medium-high heat.
In a large bowl, toss the eggplant, zucchini, bell peppers, onion, and tomatoes with olive oil, thyme, smoked paprika, salt, and pepper.

2. Grill the Vegetables:
Grill the vegetables in batches, turning occasionally, until tender and lightly charred (about 5–7 minutes per side). Set aside on a serving platter.

3. Make the Camembert Cream:
In a small saucepan, melt the butter over medium heat. Add the garlic and sauté until fragrant (about 1 minute).Reduce the heat to low, add the Camembert pieces and heavy cream, and stir until the cheese is melted and the sauce is smooth. Season with salt and white pepper to taste. Keep warm.

4. Assemble and Serve:
Arrange the grilled vegetables artfully on a platter. Drizzle the warm Camembert cream over the top or serve it on the side for dipping.
Garnish with fresh basil leaves and a drizzle of balsamic glaze for added depth, if desired.
